A whole Amelia Park lamb shoulder is rubbed with sumac & fresh rosemary, before being slow roasted for four hours, until tender & falling apart. Served with crunchy Turkish bread, warm grilled broccoli, with almonds & dijon dressing & a fresh salad of mixed leaves, roasted cherry tomatoes & parmesan.
