 Butterflied lamb rump comes ready marinated in rosemary, mint & red wine, before being pan seared. Thickly sliced & served over a warm salad of cumin roasted pumpkin, baby carrots & caramelised onion. Tossed through crisp rocket leaves with chunks of feta, fresh mint & a balsamic, olive oil dressing.
