Sometimes This Little Pig finds that a dish can look and sound complicated, but then on closer inspection and a guiding ladle, one finds out that the dish is actually rather simple to make. This is most certainly the case with Chilli Mussels. Katherine had never conceived the idea that Chilli Mussels was a simple mid week dish that could be prepared in 30 mins or less, however clever and bright Jessica showed Katherine the mussel light.
Soon Katherine was bringing out this dish on a standard Tuesday evening with airy grace and a cavalier ‘what else would one have when one has little time to prepare a meal?’ Using mostly pantry items, a little pig could easily pop to their local fish monger on their way home from work and with a few herbs from their garden whip up this dish with ease in no time at all.
So try your hand at this fabulous meal and if for some reason, you are allergic to shellfish (or as This Little Pig refers to it as; "being a bit shellfish"), then drop in some fresh snapper in place of the mussels.
