Feeling hot? Got some yoghurt in the fridge? What about some children that are demanding snacks AND an activity. There's nothing these pigs like more than solving multiple problems at once & this fabulous food waste tip from our resident dietitian and self proclaimed food nerd, Dr Amelia Harray, is an absolute banger for the warmer months. Easily mixed up with plain or flavoured yoghurt, adorned with fruit, nuts or extra goodies of your choice, this is really a "whatever is in the fridge" kinda snack hack (soooo basically the best sort).
Ingredients:
- 400g Yoghurt - you can do less or more than this amount, it really depends on your tray size, how much yoghurt you have leftover (if you're not buying it specially) and how much room is in your freezer! For a medium sized baking tray we used 400g.
- 1 cup of fresh fruit - whole or sliced is fine depending on what fruit you have or the ages of people eating the finished snack. Just keep in mind that you want to be able to enjoy the frozen snack and not be gnawing away on a huge chunk of frozen fruit...or maybe you do! #youdoyouboo
- 1/2 jar of passionfruit pulp
Method:
- Spread your yoghurt out onto a lined baking tray or flat plate & smooth with a spatula or knife so its a nice even thickness.
- Dot your fruit over the top & drizzle with passionfruit syrup before placing in the freezer for 2-3 hours or until set and easily cracks into bite sized chunks. Store broken up in a sealed container in the freezer for up to a month for an easy summer snack.
Some other ideas we love:
- The passionfruit pulp really levels things up, but other fruit syrup or compote is also very delicious. Jazz up creamy vanilla bean yoghurt with rhubarb compote, dollops of your fave jam or a quick berry compote (stay tuned for that tip dropping SOOOOON). Alternatively, you can buy yoghurt that already has a fruit compote element and gently mix as you spread for pops of flavour.
- Stewed fruit chopped or pureed so its not giant frozen chunks can also be fab, especially if you swirl through the yoghurt so its blended.
- Zest orange, lemon or lime over the top for some extra pops of citrus.
- Chopped nuts or roasted muesli add texture and crunch, dried fruit like raisins or candied Christmas fruit mince are also great for a dessert like vibe.
- If you're going for a sweeter option, dark chocolate buttons or melted chocolate swirled through your yoghurt can really add some bow chikka wow.
