It's peak summer fruit salad season & whilst you might not be that interested in those frozen berries lurking in your freezer right at this point in time, may we recommend saving this handy hack for the cooler months? With 4 ingredients & 3 mins in your microwave being all the magic required for a jammy, sticky berry compote that would ADORE being added to your pikelets, pancakes, morning muesli or overnight oats or perhaps dolloped onto a freshly baked scone...you do you boo.
Ingredients
- 500g Frozen Berries
- 1/4 Cup Sugar
- 1 Tsp Cinnamon
- 1 Orange
- Zester or Box Grater with a fine side
- Microwave proof jug or mixing bowl
- Microwave (very important)
- Clean glass jars for storage
Method
- Wash your orange well and using the fine side of your grater or a zester, gently zest into your jug or bowl.
- Add your frozen berries, cinnamon & sugar & gently mix to combine.
- Microwave on high for 2 mins & then mix again. Using a potato masher or a large spoon, smoosh it all together so it's looking more jammy than whole berries.
- Pop back in the microwave uncovered for 30-40 seconds, stir well and decant into glass jars.
- Store in the fridge for up to 10 days & enjoy.

- You're not just limited to frozen berries, any frozen fruit works beautifully including rhubarb, apple, quince, pears & mixed berries - go wild.
- Make the most of summer's bounty and freeze some warm weather deliciousness like mango, stone fruit & locally picked berries to make this as the weather cools down.
- Some sultanas added in as you decant into your jars add a delicious pop of grape goodness & are especially nice if you're adding to your morning muesli.
- Top fruit toast with fresh ricotta and a drizzle of your compote - EXCELLENT one for big and little kids.
- Add a dollop to your smoothie for a berry hit.
- Spread onto warm croissants for a twist on traditional jam.
