The Amazingness That is Chicken Tikka by Spice Mama
Feeds: 2 Hungry Piglets. Prep Time: 5 Mins. Cooking Time: 8 Mins.
Ingredients:
500g x Chicken Thighs Diced
2 x Tbs Greek Yoghurt
1 x Tbs Tomato Paste
1 x Tbs Peanut Oil
1 x Tbs Spice Mama Bombay Bottle Masala Spice Mix
1 x Tsp Salt
½ x Tsp Sugar
2 x Garlic Cloves
Ingredients to Serve:
1 x Coriander Bunch
1 x Red Onion
1 x Lemon
Method of Spice Mama Amazingness:
- Skin and finely dice or crush your garlic cloves (2).
- Slice your onion (1) into thin strips.
- Cut your lemon (1) into wedges and pull your coriander leaves off the stem.
- On a lovely serving plate, scatter over your onion, lemon wedges and ¾ of your coriander leaves in a pleasing manner with flounce and frivolity.
- In a bowl, combine your chicken (500g), greek yoghurt (2 Tbs), tomato paste (1 Tbs), Bombay Bottle Masala Spice Mix (1 Tbs), salt (1 Tsp), sugar (1/2 Tsp) and diced garlic cloves.
- In a large frying pan heat your peanut oil (1 Tbs) until hot to trot.
- Gently place in your chicken pieces and cook until just cooked through and golden brown on the outside.
- Place onto your serving plate on top of the onion and scatter over the last of the coriander. Squeeze over some of your lemon wedges and serve to your guest with a casualness that will then shock them when they try the amazingness that is this beautiful chicken tikka dish. Oink.
